
A growing body of research suggests that breakfast tables filled with refined carbohydrates, processed meat and sugar-sweetened drinks accelerate cellular aging. What people eat, and how much, changes how quickly blood sugar rises and how strongly the body's inflammatory response is triggered — differences that shape the pace of aging over time.
Jung Hee-won, a professor of geriatric medicine at Asan Medical Center in Seoul, points to blood sugar spikes caused by refined carbohydrates as a driver of accelerated aging, according to medical sources on the 14th. White rice, toast and corn flakes are typical high-glycemic foods.
Fruit juice, a breakfast staple for many, poses a similar problem. Sugar is often added, and even the natural sugar in fruit is absorbed faster in liquid form, pushing blood sugar higher. Unlike eating fruit with the skin on, juicing strips out the dietary fiber that buffers those spikes.
A study by the Population Health Research Institute at McMaster University in Canada, which tracked 134,297 people in 21 countries across five continents, found that eating just 150 grams of processed meat a week — equivalent to two 75-gram sausages — was associated with a 46% higher risk of cardiovascular disease and a 51% higher risk of death compared with people who ate none.
The International Agency for Research on Cancer (IARC), part of the World Health Organization (WHO), classified processed meat as a Group 1 carcinogen in 2015, the same category as tobacco and asbestos. The WHO noted that same year, however, that tobacco caused about 1 million deaths a year while meat consumption accounted for roughly 34,000.
The same classification does not mean the same magnitude of risk. In a cohort study by a joint research team from nine European countries, including Ramon Llull University in Spain, that followed 450,112 people for 14 years, higher processed meat intake was linked to higher risks of stomach and esophageal cancer.
A study analyzing 5,309 adults aged 20 to 65 using 1999-2002 data from the U.S. National Health and Nutrition Examination Survey (NHANES) found a statistically significant association between sugar-sweetened soda consumption and shorter telomere length in white blood cells. Telomeres are the ends of chromosomes that shorten with each cell division, and shorter telomeres are taken as a sign of more advanced cellular aging. The researchers presented the finding as an observation and did not claim a causal relationship.
The mechanism that ties the three food groups together is advanced glycation end products (AGEs), also known as glycotoxins. They form when sugars and proteins in food bind under heat — the browning and flavor produced when meat is grilled or fried are products of that reaction. When they accumulate excessively in the body, they attach to cells and tissues, trigger inflammation and distort the structure of skin proteins such as collagen and elastin. Because grilling bacon and sausage at high temperatures itself increases the amount of glycotoxins produced, the blood sugar problem of refined carbohydrates and the cooking problem of processed meat work in the same direction.
The alternatives the professor recommends are not complicated. Drink a glass of water right after waking up, and eat fruit with a lower glycemic index (GI), such as apples and pears, with the skin on. Add protein with eggs or lentils. Rather than cutting out cereal, toast and sweetened juice entirely, reducing how often and how much they are eaten is the more realistic approach.
